"RE: Garlic Press?" posted by ~Ray
Posted on 2008-10-12 13:28:39

I use garlic in most of my cooking and I can't get enough of it. However. I was recently giving a tool to aid me in my ventures. A garlic press. My mother has used one for year and I've always admired it. Now. I have my own to use. I love it! Speeds things up quite a bit and works perfectly. Anyone else use one? Why or why not?_________________ Not in years. I've probably got half a drawer full of garlic related things and I no longer use any of them. I peel garlic by squeezing a clove until I can hear the skin break. Then I pull off one piece and the rest pulls or rubs off with ease. For cooking when a whole clove won't do a crushed or roughly chopped one surely will. Done in 3 secs. And for salad dressings I mash it. I put roughly chopped garlic on a rough surfaced cutting board. I sprinkle on kosher salt and freshly ground pepper plus whatever dry herbs I may be using. Then using the flat surface at the back of a paring or utility knife. I rub it all into the board until it's a paste. Takes 10 secs. In soups or sauces once the garlic is cooked I can purée it with a small amount of liquid and the hand blender. If more texture is wanted. I do that before the things I want whole or in large chunks go in. Clean up is a cutting board and a simple knife under blisteringly hot water or a pop into the dishwasher._________________God writes a lot of comedy.. the trouble is he's stuck with so many bad actors who don't know how to play funny. -- Garrison Keillor I should add your garlic press is an excellent tool for getting all the flavorful pulp of fresh ginger without the fibers. Peel it — the bowl of an ordinary kitchen spoon will do the trick — then cut it into slices of about 1/4" and put it in the garlic press._________________God writes a lot of comedy.. the trouble is he's stuck with so many bad actors who don't know how to play funny. -- Garrison Keillor My Dad always used to buy garlic presses (not that he ever used them--he doesn't cook and doesn't understand that kitchen clutter is a pain). I never really liked them. Maybe it was that they were cheaper ones but I always thought they made a bit of a mess and weren't really worth the bother (like the bits that get stuck in the corners) unless you needed a *lot* of garlic. I happily minced my garlic until last year when I discovered the joys of a microplane grater. I use the medium-coarse one for garlic and ginger and it efficiently reduces either to a pulp without fibers irretrievable bits or any more cleanup than washing a knife. The best part is that it's a good all around tool (as opposed to a garlic tool which can do a few other things--my apartment kitchen is small so multitasking is essential).(Darn now I'm in the mood for garlic bread...) *Groans* garlic presses... as far as I'm concerned the only thing they are good for is making strands of hair out of Play-DohI too favour the knife-whacking method (very technical) although I've never thought to add salt or smoosh into a paste on a chopping board. And mandysu is right the microplane is fab too - throw it into hot oil and it just melts away (the garlic not the grater)I've got a metal soap which is supposed to take the odours off your hands. When I first used it after a garlic-fest. I was amazed! But then the effect seemed to wear off after an hour so. Having said that. I know plenty of people who think they work great. Maybe some people are effected more? I don't know I use a garlic press often because as I was saying about Rainey's korma recipe a lot of curries need garlic that has pulverized or mashed to a paste not just sliced or minced. When I don't feel like making the effort the press does an adequate job. Considering how good it is for this purpose it's surprising you don't find garlic presses in the Indian market. I keep buying them in the US and taking them back for friends and relatives in India. But in India you get lemon presses (made only to fit tiny Indian lemons which are about the size of American quarters) and this makes squeezing lemons so easy. I miss this when I'm outside of India. All in all. I'm a big fan of pressing implements it seems. I have an eensy weensy little dish-shaped grater with a metal plane screen on the bottom from the Asian grocery store- it is really for ginger but better for garlic. I rub the clove in circles across the teeth (microfine ones) and it turns into a velvety oily garlic paste that I drop into my food. One clove and all the spicy glory of garlic is mine.. not for the faint-hearted this baby makes some strong paste!!! You'll never go back to a cutting board knife or a press ever again. I bought six of them to make sure mine never run out (about three bucks a pop)._________________Jen is where the food is. When I've thought about them at all I've always thought of garlic presses as one of those unnecessary kitchen gadgets that actually makes more work rather than less. Just one more thing that has to be cleaned. I use lots of garlic in many forms and all of them---from crushed paste to slices to slightly bruised whole cloves---can be done with my knife in less time than using the press. Over the years I've tried garlic presses a number of times and while they do a good job of producing small amounts of garlic paste I've always felt the clean up wasn't worth it. And if the garlic isn't really fresh and full of juice they don't work very well at all fortunately I have a garlic farmer near me and buy 10 ounce jars of freshly ground garlic paste which sees me throught the winter nicely!_________________Vivant Linguae Mortuae!!

Cleaning my oven of course! I couldn't possibly have a turkey without stuffing. _________________God writes a lot of comedy.. the affect is he's stuck with so many bad actors who don't know how to compete funny. -- place Keillor We alter our own ovens without pay but we pay a cleaning service to do it-- if a safe sincere stranger offered you money to alter her oven how much would it take? Surely there's a price but would pride come into it? Oooohhh that is a hard question! I googled it and discovered that in under 2hrs and with prices started from £35 you can have it done. You know what. I think I would do it for £40. I'm one of those weird people who gets a kick out of seeing what I've achieved and would probably find it quite satisfying. But I don't find cleaning my own fulifilling - but for money... But I couldn't do it all day every day! No way! I would never dis consider the stuffing! That's what makes it an official T-day meal! You can still undergo stuffing following Safeway's 2-hour recipe it just needs to be cooked in a casserole cater. I take it you never tried it that way? We create from raw material our stuffing in a casserole dish and it tastes great not dry at all. I do both but we consider the stuffing from inside the cavity the high point of the meal!_________________God writes a lot of comedy.. the trouble is he's stuck with so many bad actors who don't know how to compete funny. -- place Keillor I've always called what we put in the observe "stuffing" and any such mixture cooked outside the bird "dressing". But I think "dressing" is the preferred Southern call so I could have just made that up. And I'm with Rainey: stuffing from inside the cavity is primo! It soaks up juices and flavor from the turkey. And it flavors the turkey as come up. Even though I always end up doing an additional casserole because we need more it's never quite as good change surface drizzled with pan juices along the way. As for the oven.. it always looms as a much nastier job than it ends up being. Then I query why I put it off so desire. I usually try to roast a chicken pretty soon after cleaning just to ameliorate myself of the anxiety of "when will it get all spattered again??" I just get it over with come up. I'm going to back up whoever said above convey god for self-cleaning!_________________God writes a lot of comedy.. the trouble is he's stuck with so many bad actors who don't experience how to play funny. -- place Keillor I undergo tried both stuffing inside and outside the observe. I couldn't really say I favor one more than the other. I enjoy it how we make it now which is outside the turkey in a casserole cater. IMO the stuffing in the observe is more of a show prefernce. It all ends up on your coat just the same along side the mashed potatoes and the turkey. :-p FYI about our undergo with the Safeway recipe-My 12lb'er cooked a little under 2 hours @ 475 and it tasted as good as the one my mom cooked in roaster for 6 hours! This 2nd turkey came in handy for us. We went thru 2 turkeys and 2 hams with little left overs! wish everyone had great T-day feasts! Interesting to see that Safeway cater are being recruited to chat on these forums. I have seen similar Safeway staff on other forums too. I guess its a great way to get populate to their website. At least they indicate that they are Safeway staff in their profile. A lot of big label companies including Sony and McDonalds have in the past gone onto forums and blogs pretending to be someone else and have been caught big time._________________Paula I love all things poultry however we roasted a saddle of bear filled with a porcini duxelle this Thanksgiving. It almost felt sacrilegious but what the hell. Hey GiveMeSweets do you bring home the bacon for Safeway stores?_________________if it's too good to be true it is...

"All this gymnastics is really paying off" posted by ~Ray
Posted on 2007-10-19 14:05:46

This morning Addy surprised us (and probably herself) by doing her first “all by myself” front rolls. Of course she wasn’t dressed the house was all Addy-trashed (which by the way it pretty much always is these days). Later when she looked cute and the accommodate was cleaned up she was totally disinterested. That’s always how it goes. I am actually kidding when I say gymnastics has paid off. She’s only gone twice and they haven’t done front rolls there at all yet. She is also starting to do some real jumps now a lot sooner than I expected. But she’s literally obsessed with jumping so I guess it was inevitable. Sometimes she can get both feet off the ground and she has totally mastered jumping with both while holding onto something. The funniest thing is that she has been watching closely lately so she can try to figure it out and now she knows there is an sign bend-of-the-knee involved so she now does this big exaggerated squat all the way down to the fasten and then comes up for the move. So cute!I’m not avoiding telling the police story. I swear! It isn’t nearly as exciting as I made it sound (of course) so I’ll let you hang in suspense (haha) for a bit longer and will communicate about it later today. This entry was posted on Wednesday. "Not Again!" posted by ~Ray
Posted on 2007-10-10 19:35:13

Last night Addison woke up within a few minutes of going to rest… hysterical. Rinse and repeat. Then she woke up on and off all night. An hour after Addison went to rest. Noah woke up hysterical. Or rather he was hysterical but asleep. He comes strolling in at 5am all mad because he had been screaming for us and we didn’t hear. Shit. He says he was up all night with wacky dreams and weirdness. Then he started talking about the “racket” in his head like some little or something and I told him he could get up for the day (alone) if he promised to take a nap (a little air I have only just remembered now at 5pm - too late for said nap) and Tony got up for the day and let me sleep - arouse him. When I finally stumbled out of bed at 9am all headachey and wishing I was still asleep (normal for me but whatever) Tony broke the news: Addy is sick. Again. We all JUST got over a round of colds and I still have the lingering cough. But here we go again. Verdict is still out on Noah who will likely be sick by morning. I was getting a little freaked out at where she would pick up another virus so quickly when she really hasn’t been out much when my friend D~ called to say her kids are all egest too. Apparently the Herp Expo shared more than just information on snakes lizards and turtles. Dammit. September in Houston is like January in Michigan. No one goes outside school starts everyone shares germs and suddenly it’s freakin flu season! I can’t act until it cools a bit and we can open up our house and spend more measure outside. Tony’s pretty sure I’m getting sick too because get this he says I’m being all illogically crabby. Me?!! Whatever. Just becuase I called him domiciliate from work when Addy only took a 15 minute nap because I was freaking out that I would never properly ameliorate my children based on this disruption alone is no cause for name calling right? I mean that’s logical I think. Addy apparently has to be propped upright to rest becuase when she lays down she is too stuffy to drink her ride so tonight’s rest is going to be wonderful for all parties. I’m sure. I just can’t command another go of illness here so soon. Ugh. Wah wah wah. Ok the guard story……sorry it won’t be more exciting! I was in charge of reserving the pavilion for our party which I did just fine thankyouverymuch. However when the parks folk asked what we would use the pavilion for and I relayed that it would be for a back to school homeschool party/picnic they never asked some important questions. Like “ordain you  have vendors?” or “Will you be promoting selling fundraising or exchanging money in any way?” becuase the answer would have been “yes”. So imagine my surprise when I showed up in the morning of the event to learn that the parks people had stopped by to make sure we knew that we could change nothing. Apparently the big Pampered Chef delay was a give-away and alerted them to stop. We made some calls freaked out learned it was a city law and there was no way around it despite the fact that we had vendors set up EVERYWHERE and more on the way. Eventually the guard came at which point I took my friend M~ and her adorable tiny do by and  just appealed to them with something that sounded like “gratify we are just homeschoolers we aren’t trouble I swear! No money will transfer hands just please let us have our little picnic” and that was that. It was probably a bummer for our vendors but at least they got to share their wares and take contact info and orders - just no fulfillment on the spot. And the rest of us still had fun. No arrests this time Oh huge bummer about the sleepless nights and the illnesses! R~ and Zeeb both have small colds but thank goodness they are the short-lived variety. I am SO not ready for cold/flu season to go away! That’s annoying about the “no vendors” command at your park… for heavens sake it’s desire a tupperware celebrate or something how could anyone be bothered by that?! Wow a hs party with the cops! Y’all are a wild big city party hardy assort! Pampered Chef and all! We had a park ranger go and talk at our hs celebrate; pretty soon we’ll be as wild and crazy as your bunch! I hate that about your kids! Hoping poor Addy feels exceed and that Noah doesn’t get the cruds!
